All of the chocolates I create with in my boutique are sustainable, organic, fair trade or direct trade, and originate from countries in Central and South America.
Local ingredients are always sourced when available, and sustainable ingredients are vital when sourcing around the world.
Working with chocolates and gourmet ingredients has shown me that global truly is my local.
I am becoming educated in chocolate making, using cacao beans from different origins. I have been experimenting in the boutique with various beans, sugars, and soon milks, for milk chocolates.
It all began with a passion for health, environmentalism, and a refusal to give up chocolate. After many years of playing with chocolate, Clarke Chocolates was opened by
my self, Anne Clarke.
Born and raised in Alberta, my consciousness for the environment and sustainability was learned early in life. It spills into every aspect of every food I eat.
As for the chocolates I use, appreciating the grower, knowing how and where the cacao is grown has always been fascinating to me. How the cacao is harvested and how it is processed is especially important to me and my business.
